These easy summertime skewers are one of my favorite appetizers to make when the weather is warm. They come together in just minutes, making them perfect for pool days, backyard bbq’s or any summer gatherings. The combination of juicy watermelon, tomato and fresh basil creates the perfect balance of sweet, salty and refreshing flavors that’s always a hit with family and friends. For the freshest flavor, be sure to use ripe watermelon, sweet cherry tomatoes, and fragrant fresh basil. They’re as beautiful as they are refreshing.
Ingredients
- Watermelon cut into 1 inch cubes
- 16 cherry tomatoes cut into half
- 32 Small basil leaves
- Sea Salt and pepper
- Maldon Salt
- Balsamic Glaze – I use Nonna Pia’s Classic Balsamic Glaze
- Small wooden skewers
Directions
- Place the halved cherry tomatoes in a small bowl and season with salt and pepper. Set aside for a few minutes.
- To assemble each skewer, thread on a basil leaf, a watermelon cube, another basil leaf, and a cherry tomato half. Repeat until you have 16 skewers and arrange them on a platter.
- Just before serving, drizzle the skewers with balsamic glaze and finish with a light sprinkle of Maldon Salt.
